Meal Plan Monday

It’s Monday again, and while it’s a holiday, both of our jobs/careers don’t really care about that… so today’s a basically normal day ~ although I am taking some time out to give thanks to our service men/women.

Last week we did awesome at eating at home… I don’t think we ate out once, even for breakfast! Let’s see if we can keep it up this week. Also last week I managed to spend only $40 for our whole week’s worth of groceries, which was HUGE. I did get a $5 off coupon from the cashier the week before, so that definitely helped and I really took stock of what we had in the house. We’re off to a rocky start already for this week’s grocery budget. Planting and harvest is starting this week and hubby needed snacks to tide him over in the tractor. MAN snacks ~ especially the healthy ones are expensive. ๐Ÿ™ So… I’ll do the best I can with the rest of the grocery shopping, and there’s still plenty of chicken in the freezer. ๐Ÿ™‚ (which he was absolutely thrilled to hear… not.)

Herb Roasted Chicken Quarters
mixed veggies

Pulled BBQ chicken sandwiches
potato salad

Single Serving Chicken Pot Pie (we’ll make our own pie crust I think *fingers crossed*
lots of veggies etc inside.

Hawaiian Burgersย 
the rest of the potato salad

Grilled pork chops
salad

Stir Fry (with chicken)
served over rice

Grilled Steak
Salad

    I love pulled BBQ chicken sandwiches. We normally get our meat pre-made from Trader Joe’s though.
