The weather is finally cooling down, which means SOUP! I put together this Weight Watchers Zero Point Veggie Zoodle soup so I would have a quick, easy, healthy lunch. I packaged it in pint mason jars and popped it in the freezer for future use… after having a large helping first. 😉 This is not your typical veggie soup flavors. It has a little kick to it, and was quite delicious.
Vegetable Zoodle Soup
Non stick spray
1 onion, chopped
4 cloves of garlic (I use my microplaner instead of dicing garlic)
1 inch piece of fresh ginger (microplaned)
2 stalks of celery, chopped
2 carrots, chopped
1 butternut squash, diced (I just use the long part)
2 large zucchinis, zoodled 😉
1 tsp dried tumeric
1 tsp dried cumin
1/2 tsp sriracha (you can use more/less depending on your taste)
1 bay leaf
1 tbsp parsley flakes
salt and pepper to taste
8 cups vegetable stock
Notes: you can add any additional veggies you want to this soup, if you’ve got half packs of frozen veggies in the freezer, use them up, throw them in. I use a veggeti to zoodle my zucchini. There are easier tools I’ve heard, but I love my small veggeti, it fits right in a drawer and I have very little storage space in my kitchen. When the zucchini starts getting too small, stick a fork in the end and you can use the fork to continue turning the zuke. 🙂
What you do:
Wash, prepare and chop all your veggies. (It really does make it easier to do it all ahead of time, I wish I could make myself remember that lol)
Lightly spray a dutch oven with cooking spray and cook the onions, garlic, ginger and celery until softened. (I just microplane the ginger and garlic right into the pot)
Add in the tumeric, cumin, sriracha, parsley, Â butternut squash, and carrots. Stir and cook for a few minutes.
Add the veggie stock and let it simmer until veggies are the way you like them.
Taste and add salt and pepper to your liking.
Add your zoodled zucchini and cook for a few minutes until zoodles are cooked but not mushy.
Ladle it out and enjoy!
This soup is like a little self love in a bowl. The flavors are big and delicious, and it’s so healthy! It’s also a zero point soup for Weight Watchers. 🙂
