With temperatures hitting the 100’s here I’m not very excited to turn on the oven, and heat up the house. We’re going to be having some cold meals, as well as using the crock pot, and the grill this week. I particularly love using my crock pot in this weather because it doesn’t heat up the house. I can start something in the morning when it’s cool, and we can be out and about having fun (or working) through the day and come in to a ready made dinner. By the end of the day I’m in no mood to cook ~ I’m hot, and tired… and with the crock pot ~ dinner’s already made. 🙂 Love it. If you’d like to learn more about crock pot cooking and get tons of delicious crock pot recipes check this out.
Here’s what’s on our menu this week:
Tuna Apple Salad
Crockpot Chicken Pot Pie
Chicken and Wild Rice Salad
Shrimp Salad
Grilled Pork Chops
mashed potatoes
mixed veggies
Breakfast ~ eggs, bacon, toast
Grilled Pizza (I’ve seen a couple really yummy recipes lately and figured it’s time we try it out!)
So that’s what we’ve got going this week. With harvest, and planting our menu plan has been all over the map. Hopefully this week I’ll be able to get back on track and stick with it.
If you’re having trouble planning your menu, you’ll find lots of ideas at OrgJunkie.com ~ we’re linked up to Menu Plan Monday. 🙂
I can’t wait to start cooking again now that it’s cooled off here. Where’s a recipe for the crockpot chicken pot pie? I still haven’t “baptized” my crock pot and I’ve had it a good 6 months!
It’s going to be an experiment. 🙂 I’m going to throw in some boneless chicken breasts and basically everything I use in regular pot pie… 1 can of cream of chicken and a can of cream of potato, and a bag of frozen mixed veggies. Let it cook and then make some “dumplings” and toss them on the top and let it cook for about 20 more minutes. I’ll write up a real recipe if it works out. 🙂
