Eggs are a low carbers gift from heaven. With only .ย 6ย carbsย per egg. They have 6 grams of protein, Potassium, Vitamin A, Vitamin D, B-12 and B-6.
Some of my favorite ways to make eggs:
Scrambled (with veggies and cheese), over easy, hard boiled, deviled, on top of salads, egg salad.
Ah. Eggs. ๐
We were down to our last egg yesterday. My kiddo was home sick from school so I let her have it, and then had a minor panic attack the rest of the day because I couldn’t make it to the store.
Alas, today I went to the store and got two more 18 pack cartons.

I could never choose one favorite way, but am especially fond of any way that includes cheese ๐
Lately, I’ve been doing this thing where I dice up a boiled potato (like for potato salad) then just scramble it up with eggs. A little butter, salt and pepper – so yummy.
YUM that sounds soo good. Too bad I don’t eat potatoes. ๐ I do that with zucchini though. ๐
My favorite egg sandwich is my mom’s way. Diced green olives, chopped pecans, grated boiled eggs and a little mayo- just enough for it to all stick together. Yummy! Just visiting from the A to Z, I hope you have a great challenge month!
