This week I’m trying to keep it very simple, yet delicious. We’ve got a couple cook once eat twice items.
I love it when I can cook double something to use later, or even plan on using the leftovers of one meal for something else. This is a great idea in the crock pot. It doesn’t take any longer to cook 2 roasts, than it does one. (or anything else for that matter) however, when you cook two at a time you save energy, and have food pre cooked for another day.
This is also a great way to have food left for lunches, cook one or two extra pieces of chicken, and your lunch for the next day is already made. I’m definitely going to start working this in when it comes time for Hanna to go back to school because I will be sending her lunch with her.
Here’s what’s on the menu this week:
Pork Roast
Carrots and Salad
BBQ Pork Sandwiches (left from the roast)
potato salad
Pizza
ham, pineapple, mushrooms, and black olives
Chicken Cacciatore
pasta, salad
Hamburgers
baked beans
Chicken Quesadillas
beans/rice
Roasted Herb Chicken Quarters
noodle Side dish/mixed veggies
This is what my family is having this week… however… this week I’m starting a 10 day Veggie Juice reboot. Yep, 10 days of freshly juiced fruits and veggies. We’ll see how it goes. Stop by Veggie Juice Reboot if you’re interested in what I’m eating drinking.

Funny, he certainly likes the great lunches he gets for work. Plus, he says his chest puffs up when the fellas in the lunch room ooh, aah and drool over his meals. 🙂

I DO NOT like cooking. But we have to eat and it is up to me or we would have frozen and pizza every night per my husband’s idea of a meal.
So in order to minimize the amount of cooking I do, I too cook once, eat twice.
Luckily my 10 yo daughter loves to cook. I told her she needs to start taking over dinner. LOL. I’ll help of course but soon she’ll be able to do it herself.
