A is for Apple Salad

Apple salad with crab ItsaWahmLife.com (an A-Z blogging challenge post)I used to hate making lunch for the kiddo, to the point where I’d feel annoyed and some days resentful that I had to do it. Yeah, I could have turned the responsibility over to her, but man, we have such a hard time getting out the door in the morning, we’d never be on time.

I’m not sure what changed, maybe just the way I was thinking about it, but now it doesn’t bother me so much. In fact, it gives me a few minutes in the morning to be in the moment, breathe in the new day, wake up a little, and show her how much I love her by sending her good, healthy food to eat at school.

This morning I sent her Apple Salad with Crab meat. This is usually made with tuna, however, I bought Crab meat one day (for myself) and then realized how many carbs it has. YIKES. I decided to see if she’d eat it, so I subbed the tuna with crab meat and she loved it. 🙂

Apple Salad with Crab

What you need: 

imitation crab meat
mayo
1 stalk of celery
1 apple
pickles

What you do:

Dice up your crab meat and put it in a bowl. Add a little mayo and stir. How much you use depends on how much mayo you like in your salad, we use about a tablespoon or so.

Dice up your celery into small pieces and add it to the bowl.

Dice your pickles and add them to the bowl.

Dice your apple add it to the bowl.

Stir the ingredients to get them all mixed up and serve. 🙂 Or put the lid on and stick it in a lunch box with an ice pack.

      We have left the pickles out (when we accidentally ran out lol) and it was fine. It does add a nice little zing if you like that. 🙂

    Sounds awesome. I have to stay away from the carbs because of high cholesterol but I think I’ll try with tuna or even salmon. I’m always looking for something yummy and easy to take to work with me.

      Yes, we usually eat it with tuna which makes it a fairly low carb dish. (depending of course on what you consider low carb lol).
