Meal Plan Monday ~ Vegan Style

I made the mistake Saturday morning of watching PBS. I saw a show featuring Dr. Fuhrman and his 3 steps to longer life. Which was really interesting, and led to me buying his book. (I love E readers ~ within 30 seconds I was reading it!)

His secret, apparently, to longer life is eating a Vegan diet. Interesting. I’ve been eating Primal off and on for a while, and it’s kind of like the antithesis of Vegan. So I thought it would be interesting to give it a try. I hunted around the internet and looked for more books and recipes, and found another doctor who teaches pretty similar ideas as Fuhrman but isn’t quite as hostile to breads (as long as they’re not made with white flour/sugar etc).

So this week is probably a good week to test out this little experiment since my husband (you know… meat and potatoes man) is going to be planting and probably won’t be around for dinner. I’ve got meat in the freezer, so if he does end up being here for dinner I can grill him up some meat to go with our food. 🙂 (This is how funny he is… I made a HUGE salad for lunch today (Sunday) and he asked me where the food was. I said… right here… he said “that’s not food, that’s filler”. When I asked him if I could grill up some shrimp or chicken to put on his, he adamantly refused stating meat does not belong on salad. He ended up with an egg salad sandwich.) *sigh* so if this thing sticks it could get interesting.

So without further ado, here’s our vegan meal plan for the week. (breakfasts will be fresh fruit, and/or homemade oatmeal with fruit and lunches will be large salads with lots and lots of veggies)

Lentil and Spinach Soup
with salad

Coconut Curry Veggies
over brown rice or couscous
with sliced canteloupe and salad

Black Eyed Peas with Sweet Potatoes and Greens
with salad

Homestyle Squash and Beans
with salad and sliced fruit

Quickie Quesadillas
Salad

Vegan Sheppard’s Pie
salad

Pasta Marinara (whole wheat pasta)
Salad

I’ll post them as I go through them and let you know how it’s going through the week.

  1. I am just stopping by from SITS. I love your meal plan. I did vegan once for about a week and believe it or not my meat lovin’ husband survived and actually didn’t miss the meat too much. However, it you noticed it only lasted a week – any longer and I think there would have been a riot in my house.

    I think it is fun to embark on new adventures and challenges, and that is what you have right here. I found a ton of great vegan substitutes for things we were eating that really made the switch easy.

    WOW! Those all sound DELISH!!!! One of my very dearest, dearest friends has recently transitioned to fully vegan (she’s been doing it for a year now) and she looks and feels GREAT!
