Used to Be Chicken Cordon Bleu Casserole…

This is another recipe I found on Pinterest… I made some changes to keep it low carb. Then I added some things that aren’t so low carb. If you want low carb leave out the Panko… but they really do make it MUCH better. 😉  It is delicious and here’s the original recipe.

What you’ll need:

1/2 head of cauliflower

1 small head of broccoli

2 chicken breasts

1 cooked ham slice ~ cut into 1 cup of 1/2 inch pieces

1 can cream of chicken soup

1 cup (or more) shredded swiss cheese

1/2 cup milk

sprinkle of dried parsley or 2 tsp fresh

1 tsp pre chopped garlic or 1 clove chopped
1 cup panko bread crumbs

What you do:

Chop the broccoli and cauliflower into florets.

Pop them in a microwave safe bowl with a couple tbsp of water.

Cover with saran wrap and cook for 6 or 7 minutes in microwave, until fork tender.

While that’s going on….

cut your ham into 1/2 inch chunks, cut your chicken breasts into 1/2 inch chunks, shred your swiss cheese if you couldn’t find it pre-shredded, and combine everything in a big bowl and mix well.

When the veggies come out mix them in with the rest of the ingredients and stir well to combine.

Pour everything into a casserole dish.

Sprinkle the panko bread crumbs over the top.

Pop in the oven uncovered, at 350 degrees for 50 minutes.

ENJOY! It’s so yummy! YAY!
