Coconut Chicken Cauliflower Curry

People who cook real curry are probably going to roll over in the graves at this recipe… but hey, I have been transplanted from NYC to Kansas. I love the smell and taste of curry… and still don’t really know what I’m doing. 🙂 But I’m giving it a go anyway!

This curry recipe started off as something nothing like it is now. I don’t even remember what it used to be.. but now it is this. And it’s VERY good. Even my picky eater (the husband, not the kid ;)) will even eat it!

Coconut Chicken Cauliflower Curry

What you’ll need: 

3 or 4 chicken breasts, diced into small squares
2 tbsp curry powder (I accidentally bought the RED curry ~ oh boy. super hot back to the regular!)
2 tbsp vegetable oil
1 onion sliced thinly
2 cloves garlic, diced very small
1/2 head of cauliflower diced into small chunks (you can use frozen as well)
1 can coconut milk (not the light stuff… come on now!)
1 can chickpeas (drained)
1 can diced tomatoes (no extra flavor added)
1/2 cup frozen peas

What you do:

Get your onions sliced, chicken diced, cans opened… it’s quick to put together and if you’re not ready you’re going to burn your curry.

Put your oil in the pan (I always end up using my wok for this dish… probably because it’s the only dish I make that it’s possible to use a wok with… but you can use a large skillet too). Get it warm, but not too hot.

Add curry powder. Turn fire to 4 or so. Stir constantly, until your whole house smells of curry. (a minute or two)

Add the onions. Stir around, and let them soak in the delicious curry. (a minute or two)

Add garlic. Stir around a minute or so.

Add cauliflower and stir. Give it a couple minutes.

Add chicken. Stir around a minute or so. (this is sounding pretty easy right?!)

Add the rest of the ingredients, stir. Turn down the heat just a little and allow it all to simmer for 15 minutes or so.

We usually make cous cous to go with this… since it’s so quick and easy to make we usually start it once the curry’s started to simmer.

Put some cous cous in the bottom of a bowl, fill with curry and enjoy!

This dish is very mild, but it really gives you that curry smell. (your house will smell like curry for a day or two, so if you’ve got company coming… might hold off on this one, unless of course you love the smell of curry as much as I do!)
